How to Shuck an Oyster

For those of you who have never shucked an oyster, I have the pleasure of sharing with you secrets from my good friend, the Shuck Master. She’s really an amazing shucker – Shuck Master demonstrates perfect shucking technique:


How to Shuck an Oyster


1) Drive your knife into the pointiest part of the oyster, parallel to the crack of the oyster, .

2) This will give you some wiggle room to dig inside the oyster.

3) Once you establish a crack, begin running your knife along the crack.

4) Run your knife halfway through the oyster.

5) Once you’re halfway through, begin rotating your knife so that it widens the opening.

6) The oyster should be pretty open by now, just do the rest of the work by pulling the shells apart, and voila!




I absolutely adore savoring these little oysters! We've tried the medium-sized ones before, but they were a bit too gooey for my liking. Pro tip: don't forget to bring along some lemon wedges, Tabasco, and whip up a quick Shallot Vinegar to elevate your oyster experience. Making the Shallot Vinegar is a breeze – just chop up some shallots, toss them into a jar, pour in some red wine vinegar, add a pinch of salt & pepper, and maybe a tiny teaspoon of sugar if you're feeling fancy.


During my first visit to Tomales Bay, I couldn't help but notice other savvy folks grilling up clams with pots on their grills. Turns out, Tomales Bay Oyster Company also offers fresh clams and mussels! Since then, I've been fixated on the idea that the next time I return, I'm bringing my own pot filled with butter, wine, shallots, and parsley to create a pot of pure deliciousness for my clams.
